Egg Bites

This is a healthy egg-bite breakfast recipe. It can be meal-prepped ahead of time. You can modify it to add plant-based crumbles or Canadian bacon. Low in calories, high in protein, fiber and Gluten-Free.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 cup diced yellow onion
  • 2 cups of roughly chopped baby spinach
  • 1 cup diced mushrooms
  • 2 cloves garlic minced
  • Pinch sea salt
  • Cracked pepper
  • 4 large eggs
  • 4 egg whites

Optional

  • Morning star plant-based meat crumbles 1 cup
  • Canadian Bacon 4 slices chopped

Instructions
 

  • Preheat the oven to 350 degrees
  • Generously grease a 12-slot non-stick muffin pan with cooking spray and set aside
  • Heat a large non-stick skillet over medium heat
  • Add oil bell peppers, onions, Canadian bacon, and or meat crumbles. Cook for 5-7 minutes
  • Add in spinach and mushrooms and saute for 2 minutes
  • Add minced garlic and saute for 1 minute
  • Crack 4 eggs + 4 egg whites into a bowl and whisk together until smooth and add to the vegetables
  • Pour the egg/vegetable mixture evenly into the muffin pan
  • Cook for 15-30 minutes
  • Cool and eat!
