
Egg Bites
This is a healthy egg-bite breakfast recipe. It can be meal-prepped ahead of time. You can modify it to add plant-based crumbles or Canadian bacon. Low in calories, high in protein, fiber and Gluten-Free.
Ingredients
- 1 tablespoon olive oil
- 1 cup diced red bell pepper
- 1 cup diced green bell pepper
- 1 cup diced yellow onion
- 2 cups of roughly chopped baby spinach
- 1 cup diced mushrooms
- 2 cloves garlic minced
- Pinch sea salt
- Cracked pepper
- 4 large eggs
- 4 egg whites
Optional
- Morning star plant-based meat crumbles 1 cup
- Canadian Bacon 4 slices chopped
Instructions
- Preheat the oven to 350 degrees
- Generously grease a 12-slot non-stick muffin pan with cooking spray and set aside
- Heat a large non-stick skillet over medium heat
- Add oil bell peppers, onions, Canadian bacon, and or meat crumbles. Cook for 5-7 minutes
- Add in spinach and mushrooms and saute for 2 minutes
- Add minced garlic and saute for 1 minute
- Crack 4 eggs + 4 egg whites into a bowl and whisk together until smooth and add to the vegetables
- Pour the egg/vegetable mixture evenly into the muffin pan
- Cook for 15-30 minutes
- Cool and eat!
