This is a healthy egg-bite breakfast recipe. It can be meal-prepped ahead of time. You can modify it to add plant-based crumbles or Canadian bacon. Low in calories, high in protein, fiber and Gluten-Free.

Ingredients
1tablespoonolive oil
1cupdiced red bell pepper
1cupdiced green bell pepper
1cupdiced yellow onion
2cupsof roughly chopped baby spinach
1cupdiced mushrooms
2clovesgarlic minced
Pinchsea salt
Cracked pepper
4large eggs
4egg whites
Optional
Morning star plant-based meat crumbles 1 cup
Canadian Bacon 4 slices chopped
Instructions
Preheat the oven to 350 degrees
Generously grease a 12-slot non-stick muffin pan with cooking spray and set aside
Heat a large non-stick skillet over medium heat
Add oil bell peppers, onions, Canadian bacon, and or meat crumbles. Cook for 5-7 minutes
Add in spinach and mushrooms and saute for 2 minutes
Add minced garlic and saute for 1 minute
Crack 4 eggs + 4 egg whites into a bowl and whisk together until smooth and add to the vegetables
Pour the egg/vegetable mixture evenly into the muffin pan
Cook for 15-30 minutes
Cool and eat!
